Type 1: Vegans Not Welcome - This restaurant is not vegan literate nor do they have on-menu vegan options. Servers are not trained to work with vegan guests and even if the chef could prepare a vegan dish on request, guests would never know it by reviewing the online menu. Not attracting vegan guests.
Type 2: Vegan Literate - This restaurant knows what “vegan” means and has clearly labeled their menu and trained servers to know what dishes vegans can select or modify. Vegan literate restaurants did not change their menus to accommodate vegan customers, rather they labeled their accidentally vegan options. A great example of this is Olive Garden which has very clear nutrition info on their website but the options for vegans were not designed with vegan customers in mind, rather vegan friendly by default: breadsticks, salad, and pasta marinara. These restaurants are not attracting vegan guests but they’re able to confidently serve the few that happen to walk in.
Type 3: Vegan Options - This restaurant has enticing vegan options but is not vegan literate. The food looks delicious but menus are not labeled and servers can not confidently speak to the ingredients in the dish or explain the kitchen’s allergy protocol. While this type of restaurant will attract vegan guests, they won’t receive the top reviews they were expecting, which can leave them feeling frustrated and resentful of customers.
Type 4: Vegan Friendly - These restaurants have on-menu options designed with the vegan customer in mind. The options are labeled accurately and servers are trained to confidently sell the dishes and respond to vegan customer questions. These restaurants both attract vegan guests and get top reviews.
