Lauri Barnabo

Lauri is the founder of Wild Plant Kitchen and a Certified Vegan Hospitality Consultant. She divides her time between Wisconsin and Texas, two regions whose traditional meat and cheese-heavy cuisines can be a challenge for plant-forward guests like herself. Becoming vegan later in life, Lauri quickly discovered its many benefits for health, animals, and the environment. She wondered why this compassionate, accessible lifestyle was so overlooked, and why vegan options were so hard to find when traveling or dining out. That question sparked her light-bulb moment: to bring her innovative kitchen spirit to restaurants and help them close the gap in guest attraction and satisfaction with a more inclusive menu, while advancing sustainability goals and boosting profitability.

Lauri writes extensively about her adventures of dining out in the wild as a vegan. A licensed culinary educator, imaginative cook, and dedicated foodie, she is happiest when traveling or in the kitchen, getting creative with plant foods. Through meaningful conversations and mindful, high-impact strategies, Lauri supports restaurants in offering delicious, thoughtfully crafted, plant-forward menus to confidently welcome and serve all guests.
