Nicole Brennan
Nicole Brennan is the founder of Grey Salt vegan consulting and hospitality—based in Savannah, GA! She discovered her passion for vegan cooking and baking could go further when she kept running into the same frustrations while dining out and set out to create a solution.
After a 12-year career in advertising and 10 years vegan, Nicole hit refresh in 2024 shifting from creative problem solving for major brands to local restaurants. In order to humanize the umbrella of questions and stigmas that come with veganism, she helps rebuild the perceptions around ‘veganism’ through education, encouragement and incredible homemade cakes. By drafting creative briefs and finding unique restaurant-branded traits, she is able to craft intriguing plates for every appetite to enjoy. Nicole believes creating vegan menu items is an open table where everyone is welcome to toss in ideas. Her clients admire the positivity she brings through passionate conversations, problem solving, and collaboration.
